Coconut Cream Pie

    COCONUT CREAM PIE

    3 Egg yolk(s)

    1 cup(s) Sugar

    4 tablespoon(s) Cornstarch

    3 cup(s) Milk

    1 cup(s) Coconut, flaked

    1 tablespoon(s) Butter

    2 teaspoon(s) Vanilla

    3 Egg white(s)

    4 tablespoon(s) Sugar

    FILLING: Mix egg yolks, sugar, and cornstarch together with enough COLD WATER to make a paste. Heat milk to boiling
    in a heavy saucepan; add the egg mixture and cook until thickened. Remove from heat and add ALL BUT 1/4 CUP of
    coconut, butter, and vanilla. Pour into baked pie crust. Top with meringue.

    MERINGUE: In a stainless steel or copper bowl, beat egg whites until foamy. Add 1 tablespoon sugar. Continue to beat
    until stiff peaks form. Gently fold in remaining sugar, taking care not to overwork the meringue. Sprinkle with the remaining
    1/4 cup of coconut, bake in preheated 300 oven for about 20 minutes or until browned on top.
