2 Navel oranges, peeled and separated into sections
1/3 c. finely chopped red onion
2 t. olive oil
1 1/2 t. minced garlic
1/4 t. cumin
1/4 t. salt
1/8 t. cayenne
2 T tiny capers, rinsed (or rinse and chop large capers)
1/4 c. chopped cilantro
1. Slice the orange sections crosswise into pieces about 1/4" thick and place them in a small bowl.
2. Add the onions, olive oil, garlic, cumin, salt and cayenne to the oranges, stir the ingredients to combine them well. Cover the bowl and refrigerate until shortly before serving time.
3. Before serving, stir in the capers and cilantro.
Prep tip: Try 1/2 c. chopped parsley instead of the cilantro and 1/4 cup of rinsed pitted and coarsely chopped cured olives instead of the capers.
