Broccoli Leek Soup

    1 1/2 lbs. broccoli , trimmed and stalks split
    lengthwise.
    1 leek (8 0z.), cut off root ends and green stems
    and cut into 1/2' slices
    1/2 cup celery, sliced
    1/2 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. nutmeg
    1 bay leaf
    2 cans (13 3/4 oz.size) chicken broth
    3 T. butter
    2 T. flour
    2 cups half-and-half (I use 2% or skim)

    In soup kettle put first 7 ingredients. Add chicken broth and water to make 4 cups. Bring to boil and simmer covered til broccoli is tender (about 30 minutes.)
    Drain and reserve broth. Puree vegetables in blender . In kettle or dutch oven melt butter and stir in flour til smooth......gradually add reserved broth, stirring over medium heat til mixture boils.
    Add pureed veggies and milk and stir soup til hot and well blended.
    Makes 8-10 servings.
