Tex Mex Tomato Soup

    1 red bell pepper, sliced
    1 onion, sliced
    1 quart chicken stock
    1 can condensed tomato soup
    10 oz can Rotel tomatoes
    6 oz can chopped black olives, drained
    salt and pepper
    1/4 tablespoon garlic powder
    1 teaspoon Tabasco

    In a large pot cook and stir peppers and onions in a little oil til soft. Stir in chicken stock and tomato soup, the Rotel, olives, salt, pepper, garlic powder, parsley, and Tabasco. Heat through. Ladle in bowls over broken tortilla chips. Serve with shredded cheese and dollops of sour cream.

    Serves 6
