Seafood Jus

    1/3 c. olive oil
    1/2 c. finely chopped garlic
    1 c. finely chopped parsley
    2 T. red pepper flakes
    1/2 t. pepper
    6 pack of dull beer (Bud)
    1/4 lb. butter

    1. In a deep saucepan heat the oil and cook the garlic till soft but not browned. Stir. Add the parsley and cook for a few minutes. Stir in the pepper flakes & pepper.
    2. In a separate pan, boil the beer. The beer will foam, and then the foam dies down, continue to boil for 1 more minute. Add the beer and butter to the garlic mixture and mix well.
    3. Cook mussels, shrimp, crab -- any seafood in this sauce. Can be served over linguine.
