Baked Pears w/Mascarpone Cheese

    1 vanilla bean, split lengthwise, or 2 teaspoons vanilla extract
    1/3 cup dry white wine
    1 tablespoon unsalted butter (no substitutions), softened
    5 ripe Bosc pears, quartered and cored
    1/4 cup honey
    1/8 teaspoon freshly ground pepper
    1/2 cup mascarpone cheese (or 1 (3 oz.) package cream cheese, softened,
    mixed with 1/4 cup heavy or whipping cream, whipped)

    1. Heat oven to 400F. Combine wine and vanilla bean, if using. Let
    stand 10 minutes. Spread butter in bottom of shallow 3-quart baking
    dish. Arrange pears skin side down in single layer in baking dish. Pour
    wine mixture and honey over pears; sprinkle with pepper. Bake, basting
    occasionally, 20 minutes, until pears are tender. Remove from oven. Add
    vanilla extract, if using, to pan juices and drizzle over pears. Cool to
    room temperature.

    2. To serve, arrange 3 or 4 pear wedges on each of 6 dessert plates.
    Spoon mascarpone on top and drizzle with pan juices. Makes 6 servings.
