1 cup flour
1 cup milk
1/2 tsp. salt
2 Tbsp. roast beef drippings
With wire whisk or fork, beat flour, milk, salt and eggs until smooth. Spoon roast beef drippings into batter. Put 1/4 cup roast beef drippings into 9 by 13 inch pan. Place pan in 450 degree oven; heat until very hot, about 3 to 5 minutes. Quickly pour batter onto hot drippings in pan; bake 10 minutes. Turn oven control to 350 degrees; bake 20 minutes longer or until pudding is lightly browned and puffed.
Serve with roast beef.
(our original family recipe called for baking 20 to 30 minutes at 450 degrees)
