Corn Fritters

    Salad oil
    16 oz. can whole kernel corn, drained
    1 cup flour
    1/4 cup milk
    1 tsp. baking powder
    1/2 tsp. salt
    2 eggs
    Confectioners sugar or maple syrup

    In heavy saucepan over medium-high hat, heat 1/2 inch salad oil to 400 degrees. (or use electric skillet or deep fryer)
    Stir 1 Tbsp. salad oil, corn, flour, milk, baking powder, salt and eggs just until blended. Drop batter by tablespoons into hot oil; fry 3 to 5 minutes, until golden brown, turning friters once. With slotted spoon, remove fritters to paper towels to drain. Sprinkle with confectioners sugar or serve with syrup.
