Green Thai Curry with Scallops

1 1/2 cups unsweetened coconut milk
4 kaffir lime leaves or zest of 1 lime
4 tsp thai green curry paste
1 T. fish sauce
1/2 t. sugar
1 T. frozen spinach
1 T veg. oil
1/2 C. chopped onion
1/2 C. shredded basil
1 1/2 lbs scallops (or chopped eggplant)
1/2 C. frozen peas
1 Lg. tomato, peeled, cored, seeded, and diced
2 sliced star fruits
Mix coconut milk with kaffir leaves. bring to boil. Reduce heat and simmer 8-10 min. Add 2 t. green curry paste and stir. cook 1-2 min. remove from heat. Remove kaffir leaves. Add fish sauce, sugar, and spinach. Puree in blender.
Saute onion and basil in oil. Add scallops or veg option and rest of curry pasted. Cook about 1 min. Add reserved sauce and peas +/- sliced star fruit.
Sprinkle tomato and cilantro on top.
