Noodles with ginger and green onions

    8 ounces dried chinese egg noodles
    3 Tbsps. peanut oil
    2 inches ginger root, cut in thin strips
    8 green onions, cut in thin strips
    1/2 tsp. salt
    1 Tbsps. oyster sauce.

    Heat a wok over high heat. Add oil and swirl it around. Add the ginger, stir for a few seconds, then add the green onions and stir until hot. Season with salt. Remove from heat.

    Meanwhile plunge the noodles in boiling water for about 1 minute or until al-dente. Seperate the noodles with a fork during cooking. Drain in a colander.

    Add the noodles to the wok and toss with a fork. Add the oyster sauce, toss again and serve.
