Hoisin Pork in Lettuce Leaves

    2 1/2 tsp. toasted sesame oil
    1 Tbsp. minced ginger
    2 cloves minced garlic
    1 lb. lean ground pork
    1 8 ounce can sliced water chestnuts
    drained and chopped
    7 Tbsps. hoisin sauce
    1 Tbsp. soy sauce
    1 tsp. chili paste
    1 1/2 cups beansprouts
    small bib lettuce leaves.

    Heat sesame oil in wok over high heat. Add ginger and garlic and stir fry 15 seconds.

    Add pork and water chestnuts stir fry, stirring for about 15 minutes.Stir in 4 Tbsps. hoisin sauce, soy sauce and chili paste. Stir fry 2 minutes longer, or until pork is coated with sauce.

    Just before serving add remaining hoisin sauce.

    Serve with bean sprouts and lettuce.
