Oatmeal-Cinnamon Banana Cookies with C. Chips

1/2 cup margarine, at room temperature (use soy if vegan)
1 cup firmly packed brown sugar
1/4 cup molasses
1 tsp. vanilla extract
1-2 ripe banana, well mashed
11/2 cup sifted all-purpose flour
1/2 cup whole wheat flour
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
3 cups old-fashioned rolled oats
1/2 cup walnuts
1 cup reduced fat chocolate chips
Preheat the oven to 350 F.
In a large mixing bowl, cream together the margarine,
sugar, molasses, vanilla, and banana.
In a separate bowl, sift together the flours, salt, and soda,
and cinnamon. . Add the dry ingredients to the creamed mixture and blend well. Stir in the oats, and fold in the walnuts and chocolate chips. Drop by teaspoonfuls onto greased cookie sheets, and bake for 12 to 15 minutes.
Makes 3 dozen.
