John Bull's Potted Cheese

4 cups shredded Cheshire cheese (1 lb)
3 drops or more Tabasco
6 Tbsp butter, room temperature
1/2 tsp ground mace
1/8 tsp dry mustard
1/2 cup cream sherry
In a medium bowl, combine ingredients in order given. Beat until smooth. Pack into a 2 cup crock or jar with an air tight lid. Press waxed paper down onto cheese mixture. Cover with lid. Will keep 2 weeks in fridge. Makes 2 cups.
