4 slices bacon, cut in 1/4 inch pieces
1 cup flour
1 Tbsp sugar
3/4 tsp salt
2 cups milk
2 cups halved strawberries, or orange chunks, or poached apple chunks, or whole berry cranberry sauce, or pineapple chunks (you get the idea)
2 cups shredded Edam cheese
Preheat oven to 375. In a heavy 10 inch skillet with ovenproof handle, cook bacon over medium heat until crisp. Reserve about 4 Tbsp bacon drippings in skillet; set aside. Sift flour, sugar and salt into a medium bowl; set aside. Beat eggs in a small bowl. Stir in milk. Beat egg mixture into flour mixture until batter is smooth. Heat reserved bacon drippings over medium high heat. Pour batter into hot bacon drippings. Bake about 30 minutes in preheated oven until golden brown and puffed at edge. Remove from oven; let stand 5 minutes. Center will sink. Top with fruit; sprinkle with cheese. Bake again until cheese is very soft, about 5 minutes.
