4 boneless chicken breasts
flour for coating
3 tbs olive oil
2 peppers (red, yellow or green)cut into strips
1/2 onion sliced
4 crushed cloves of garlic
5 tsp sweet paprika
1/4 tsp hot paprika
1 1/4 cups chicken broth
4 canned plum tomatoes
1 tbsp tomato paste
season chicken w salt and pepper; coat with flour.
heat oil on high, cook chicken till brown ( appx.4 mins per side) transfer to plate.
add peppers and onions to skillet, saute 5 mins. reduce heat to low, add both paprikas, stir for 2 mins.
add broth, tomatoes, and paste, return chicken, bring to simmer; cover and cook till just cooked through (appx 6 mins)
remove chicken; increase heat and reduce sauce, till spoon thick! serve sauce over chicken
