VICKY'S fruitcake
4 cups raisins (golden)
3 large containers of fruit mix( 32 ounces 2lbs.)
3 cups of walnuts or pecans
1 cup pinapple orange juice
1 cup coffee(cold)
5 cups sifted cake flour (no need for salt and baking powders)1lbs. shortning
2cups white sugar
1 cup brown sugar
3teaspoons cinnamon
1 teaspoon allspice
12 eggs seperated
1tablespoon vanilla 2 lemons zested and juiced
1 cup brandy or more depending on who is eating it (i had kids so i
made two diff. one with more brandy and the other)
soak 3 days before or longer
raisins
fruit
nuts
lemon zest and juice
1 cup brandy or more (optional)
preheat oven to 285
take all dry ingredients except the sugar"s(white and brown)
cream the shortning ,sugar's, vanilla, egg yolks(egg whites in
seperate bowl )
stiffen egg whites
mix the juice and coffee togehter(you might find you need more or
less liquid )
mix dry ingredients with the creamed mix with the liquids with the
flour alternating
after completed fold in fruit mix
then fold in egg whites
bundt pan will take 3hours and 45 min. to 4 hours
loaf pan will take 3 hours to 3 hours and 15 min. baked weight about
10 lbs. (it had to of been heavier)
