Turnip and Rutabaga Salad

This is adapted from The Victory Garden Cookbook, one of my favoritevegetable cookbooks.
3/4 pound turnip
3/4 pound rutabaga
2 carrots, grated
1/2 cup chopped parsley
2 tablespoons fresh mint
1/3 cup lemon juice
1/2 cup combination olive and vegetable oil
freshly ground pepper
1 head Boston lettuce
Peel and grate turnip and rutabaga. You should have about 4 packed cups. Sprinkle with salt and let sit for 30 minutes; squeeze moisture out. Mix
turnip, rutabaga, carrots, scallions, parsley, and mint. Beat lemon juice and oils together and stir into turnip mixture; season with salt and pepper
to taste. Marinate for one hour before serving. Place lettuce leaves on 6 serving plates. Spoon salad on top. Serves 6.
