Tortellini In The Pink

    One Package Frozen Tortellini (your choice of flavor)
    2 cans stewed Italian Tomatoes
    1/2 c. heavy cream
    2 tb. chopped fresh basil
    1 tsp. thyme
    1 whole onion chopped finely
    1 tsp extra virgin olive oil
    1 tsp butter

    To get the tortellini going, boil 6 quarts of water and add the teaspoon of olive oil.
    Meanwhile in a saute pan under medium heat, melt the butter and add finely chopped onions. Saute onions until transparent. Add the cans of stewed tomatoes, thyme, and basil, cook for approximately ten minutes, until mixture comes to a slow boil.

    Cook tortellini in 6 quarts of water for 8 - 10 minutes, until soft to touch with a fork. Drain pasta well. Slowly add cream to tomatoe mixture, stirring very well. Your tomatoes will take on a beautiful and tasty shade of pink. Slowly pour mixture over tortellini. Wa~La, now you have TORTELLINI IN THE PINK. This is a really great recipe for something that you can literally whip together in minutes. I usually substitute the cream for a non diary creamer, but it really is best with the cream. Enjoy!!
