2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
3 cloves garlic, sliced
8 ounces tempeh, cut into cubes
1 onion, chopped coarse
2 green bell peppers, cored and sliced into bite-size pieces
2 jalapeño peppers, sliced
3 tomatoes, chopped coarse
2 cans beans
Pour oil into large saucepan, sprinkle with chili powder and cumin. Add garlic and tempeh and sauté about 5 minutes, or until lightly browned, stirring often. Stir in remaining vegetables and beans. Cover and simmer for 15 minutes. Remove cover, and cook for 10 minutes or until mixture thickens. Serve over rice.
