2 lbs (1kg) of dessert apples (not cooking apples)
6oz (180 gms) sugar
You need a metal pan which can go on top of the stove and into the oven
- mine is around 10" (250mm) diameter and 2" (50mm) deep.
Peel and core the apples, then halve them. Arrange the apples in the
pan and add the sugar and butter to them. Put on a fairly high heat on
top of the stove for around 5 minutes, the sugar and butter need to melt
and form a caramel whilst cooking the apples.
Remove the pan from the stove and place rolled out puff pastry on top.
Bake in the oven at around 450F (200C) until the pastry is risen and
brown, approx 20 minutes.
Allow to cool a little then place a plate on top of the tart, flip it
over, and turn it out upside down. Eat it warm with Creme Fraiche.
