Swet and Sour Borscht

4 lbs beef flanken
water
1/2 tsp white pepper
2 tsps garlic powder
Kosher salt to taste
juice of 2 lemons
1/2 cup of honey
8 beets
Place meat in a large pot and cover with water. Add pepper, garlic powder, salt, lemon juice and honey. Bring to a boil and then reduce to a simmer, cover and cook until meat is tender, about 1-1/2 hours. Wash and peel beets, then grate in a food processor or by hand. Add to the simmering meat soup and cook another 20 minutes. Adjust seasonings to taste. Serve hot or cold with a boiled potato if desired.
