Stuffed Peppers

    3 (10 oz.) pkgs. Cheddar cheese, grated
    1 lb. pack of Italian sausage
    1 c. Parmesan cheese
    2 (3 oz.) pkgs. cream cheese
    2 (10 oz.) pkgs. frozen chopped spinach
    3 eggs
    3 c. long grain cooking rice
    1/2 tsp. pepper
    5 peppers halved lengthwise
    Olive oil
    Tomato sauce of your choice to top peppers

    Boil enough water to cover peppers. Half peppers lengthwise and add to boiling water. Shut heat off under peppers and let stand in boiled water for 10 minutes. Drain and let cool.
    Combine sausage, cheddar cheese, cream cheese, Parmesan cheese, chopped spinach (cooked according to package directions, drained and all water squeezed out), eggs and pepper. Don't worry if cheese is a little lumpy, hot rice will melt it in next step. Set aside.
    Cook rice according to package directions.
    While rice is hot (important, rice must be hot to melt all ingredients together properly) add sausage and cheese mixture to rice.
    Coat bottom of pan with olive oil. Stuff peppers with filling mixture and place in pan. Bake at 350 for 35 minutes. Add tomato sauce and additional Parmesan cheese and bake an additional 35 minutes.
