Stir-Fry of Asparagus with Cashews

    1 1/2 lbs. asparagus
    2 T. extra virgin olive oil (I use 1 T.)
    2 tsps. sesame oil (I use 1 tsp.)
    1 T. finely chopped fresh ginger root
    1/2 cup coarsely chopped roasted cashews
    1 T. soy sauce

    Cut off and discard lower tough stems of asparagus.
    Cut each stalk diagonally into 2 or 3 pieces.
    Heat the oils in wok over high heat and stir-fry
    ginger for 1 minute.
    Add asparagus and stir-fry till tender but crisp,
    4 to 5 minutes.
    Stir in cashews and soy sauce.
    Serve immediately.
