Stir Fried Portobello Mushrooms

    1 T. oil
    3 cloves garlic (finely chopped or put through garlic press)
    1 T. chopped fresh ginger root
    1 large onion, halved, thickly sliced
    1/2 lb. portobello mushrooms
    1 lb. button mushrooms
    1/4 cup chicken or vegetable stock
    1/4 cup oyster sauce
    3 green onions

    Heat oil, add garlic & ginger, stir-fry over medium heat 30 seconds. Add onion. Cook, stirring 3 to 5 minutes until onions wilt & brown but do not burn.

    Add portobello & button mushrooms. Cook 8-12 minutes until mushrooms are tender and any liquid released has evaporated. Add stock, oyster sauce. Cook about 3 - 5 minutes longer. Juices should be thick.

    Stir in green onions. Cook 30 seconds.

    Serves 4
