2 lbs butternut squash
1/4 C. olive oil
2 T. butter
1 onion cut into 1" pieces
2 apples, peeled, cored, cut into small pieces
1/2 T. brown sugar
2 T. minced ginger (2 inch piece)
1 quart stock
3/4 t. nutmeg; 1-1/4 t. salt; 1/4t. thyme; pepper.
Roast squash with olive oil. In large pot melt butter. Add onions. Cook a few minutes. Add apples and sugar. Cook a few minute. Add ginger. Add stock and stir in squash. Add seasonings and simmer @ one hour. Use immersion blender to smooth soup or use regular blender or processor.
