South of the Border Squash

    1 medium onion, chopped
    1 lb. yellow squash
    1/2 tsp. salt
    1/2 cup water
    1 2 oz. jar chopped pimiento
    2 hard cooked eggs sliced
    1 4 oz. can chopped green chiles, undrained
    1 cup cubed Monterrey Jack cheese
    3/4 cup crushed cornflakes

    Cut squash into 1/4" slices. Combine first 4 ingredients in saucepan. Cook 6-8 minutes, or until squash is tender. Drain well Add chilies, pimiento, and cubed cheese. Spoon into 1 1/2 quart casserole. Place egg slices on top, sprinkle with cornchips. Bake 350 degrees for
    20 minutes or until thoroughly heated. Makes 4 servings.
