4 oz. Seaphire™, blanched and rolled
(See Creative Cuisine; August 1999)
2 oz. fresh basil leaves
2 cloves garlic
¼ cup pine nuts
¼ cup grated Parmesan cheese
¼ olive oil
1 teaspoon fresh lemon juice
To blanch Seaphire, plunge in boiling water for 15 seconds. Remove, place between paper towels, and roll with rolling pin to remove some of the moisture. Place Seaphire and basil in bowl of a food processor and pulse to coarsely chop. Add garlic, nuts and Parmesan cheese. Pulse to grind. With machine running add oil. Stir in lemon juice.
