Seafood Savour Mushrooms

    12 fresh cup mushrooms
    60g (2oz) butter or marg, melted
    1 onion, chopped
    1 clove garlic, crushed
    1 tomato, peeled and chopped
    2 tbls sherry
    185g (6oz) crabmeat, drained and flaked
    1/2 cup crumbed, stale bread
    S & P to taste
    1/4 crumbed, stale bread, extra
    1/4 cup grated tasty cheese.

    Remove and chop mushroom stalks. Brush mushroom caps with butter, reserve remaining butter. Saute mushroom stalks, onion and garlic in reserved butter. Add tomato and sherry. Cook for 2-3mins. Mix in crabmeat and crumbs. Season to taste. Spoon crab mixture into mushroom cups; sprinkle with combined extra breadcrumbs and cheese. Place on greased baking dish; bake in a hot oven (200C/400F) for 15 mins until tender.
