Rose Breasted Bird Watcher's Delight (Jessie's recipe)
4 lb chicken, cut in pieces, OR 4 to 5 cups of leftover cooked chicken or turkey
1 cup flour (If using leftover cooked fowl, omit flour)
2 tsp paprika
dash garlic salt
dash each rosemary, thyme & sage
2 Tbsp brown sugar
½ tsp powdered ginger
½ cup (or more) cranberry jelly or sauce
¼ cup orange juice
1Tbsp Worcestershire sauce
dash Tabasco sauce
1 tsp grated orange rind
1 tsp soya sauce
Coat chicken pieces, if raw, with flour. Sprinkle with herbs & spices. Bake at 400° for 30 minutes. Cover with sauce and bake an additional 15 to 20 minutes.
If chicken is already cooked, put it in a casserole dish, then add the herbs & spices to the remaining ingredients in a saucepan & bring to a boil. Pour over chicken & bake at 350° for about 15 minutes.
