Red Velvet Cake

    Cake:
    2 Cups sugar
    1 cup softened butter
    2 eggs
    2 heaping Tbs Cocoa
    2 oz red food coloring
    2 1/2 cups cake flour
    1 tsp kosher salt
    1 cup buttermilk
    1 tsp vanilla
    1 tsp baking soda
    1 Tbs vinegar
    ICING:
    12 oz cream cheese
    3 Tbs sour cream
    2 tsp vanilla
    1 stick butter
    2# bag confectioners sugar
    1 cup toasted pecans,chopped

    Preheat oven to 350
    cream sugar and butter til light and fluffy,about 3 min. Add eggs one at a time and mix well after each.Mix Cocoa and food coloring together and add to creamed mixture. Sift together flour and salt. Add flour mix to creamed mixture alternately with buttermilk. Blend in vanilla. In small bowl, combine baking soda and vinegar(it will foam) add to mixture. Pour into prepared baking pans, Bake 24-35 min. cool in pans 10 min. then turn out and completely cool layers.
    For ICING: combine cream cheese and butter and cream until light and fluffy, Carefully mix in confectioners sugar to make thick icing -SOmetime may take all 2#
    Ice cake press pecans onto sides of cake
