3 cloves garlic, minced
1 onion, chopped
1 tsp oil (olive or canola)
1 and 1/4 lb boneless, skinless chicken breasts
10 oz. size of red chili sauce (look for Las Palmas brand Salsa de Chile Colorado-may only find larger size)
1/2 tsp dried oregano
2 c. chicken broth
2 15-oz cans white or yellow hominy (one of each)
Brown garlic and onion in oil. Cut chicken into bite-size pieces and add to browned onion. Add chili sauce, oregano, and chicken broth. Bring to a boil and simmer until chicken is cooked (7-8 minutes). Add hominy, reheat to simmering and serve.
