    1/4 cup cooked spinach,chopped
    1/2 lb lean ground pork
    3 T reduced sodium soy sauce
    3 T chopped green onion
    2 T chopped cilantro
    1 T grated fresh ginger
    1 T dry sherry
    1 T Oriental sesame oil, dark
    1/4 t ground black pepper
    44 round wonton wrappers, 3 1/2" dia.(see note)
    1 egg,beaten
    3 T vegetable oil
    1 cup chicken broth

    Prepare dumplings:
    Squeeze liquid from spinach between paper towels. Place spinach in bowl.Stir in pork, soy sauce, green onions, cilantro, ginger, sherry, sesame oil and blac pepper.
    Working 6 at a time, lay wrappers on board. Drop one teaspoon filling in each. Brush egg around edge, fold wrapper in half and seal, starting from center and pushing out air. Pleat sealed edge, place on waxed paper lined baking sheet, repeat with remaining wrappers. Heat 1 tablespoon oil in 12" heavy skillet, over medium heat. Add potstickers, 1/3 at a time, in single layer, cook 4 minutes or until browned. Heat chicken broth, carefully add 1/3 broth to skillet, cover and cook 8 minutes, or until liquid evaporates and bottoms crisp.
    Transfer potsticker to baking sheet and cover with foil and keep warm in oven at 300.
    Cook remaining potstickers.
