Recipe Category: Canning & Preserving
Recipe Preparation Level: moderate
Best Peppers ever.
9 cups water
6 cups brown sugar
3 cups vinegar
3 tablespoons coarse salt
2 tablespoons allspice tied in a cheesecloth
Cook all above to a boil.
Clean and slice about 5 pounds more or less of nice fat red peppers.
Put them in the syrup for a few minutes to soften.
Stuff peppers into sterilized jars. You may add a few dry hot peppers and garlic to the peppers if you so desire.
Fill jars with the syrup nearly to the top, add 1 or 2 tablespoons of olive oil,
Seal jars but not tightly. Put jars in a water bath and cook them for about 15 minutes.
Take jars out of hot water bath and seal them tightly. Stand the jars upside down till they cool.
