Pasta with Creamy Tomato Sauce

    Pasta with Creamy Tomato Sauce

    1 can of tomatoes undrained
    1 onion chopped finely
    garlic, crushed, to taste
    3 tbs tomato paste
    cracked black pepper to taste
    fresh basil to taste (or oregano)
    olive oil or butter
    3 tbs mayonnaise
    dried pasta
    [These quantities make enough to feed two, with plenty of leftovers for lunch the next day.]

    Fry onions and garlic until translucent. Add the crushed tomatoes and juice, tomato paste and pepper, simmer for as long as the pasta takes to cook. Just before serving, stir in the mayonnaise and basil.

    Variation - brown chicken with the onions, or use as a sauce over pan fried breast fillets. The more mayo you use the creamier it is.
