Paprikash (Romainian)

    PAPRIKASH
    Melt in a large pot
    3 T lard [or bacon grease or Crisco]
    Add
    4 large onions (diced)
    Sauté until transparent.
    Stir in
    1 t salt
    4 T paprika
    1/4 t pepper
    Add
    1 (3-3˝ lb) chicken (cut in pieces)
    Brown chicken on all sides
    Add
    1 c chicken stock [or water or tomato juice]
    4 potatoes (diced)
    Cover and simmer for 1 hour.
    Shake pot occasionally to prevent sticking.

    Add galuste to paprikash. Be sure to cover galuste with sauce from
    paprikash.
    Serve.


    GALUSTE
    Boil a pot of water

    In a small bowl put
    1 1/2 c flour
    Make a well, in well place
    2 eggs
    With a wooden spoon, gradually stir in
    ˝ c milk
    Stir until smooth

    Pick up small amount of batter with edge of a metal tablespoon (no more
    than
    half full).
    Drop into boiling, salted water. [Put spoon in water each time so galuste
    will slide off]
    Cook for 5 minutes.
    Drain in a colander and rinse.
