Overnight Lasagna

    Sauce ingredients:
    2 pounds ground beef or Italian sausage (or a combination
    of the two)
    1 jar store-bought spaghetti sauce (approx. 1 quart)
    1 can stewed tomatoes (approx. 16 ounces)
    1 4-ounce can sliced mushrooms, drained

    Brown meat; drain fat. Add sauce, tomatoes and mushrooms to meat.
    Simmer approximately 10 minutes.

    8 ounces uncooked lasagna noodles
    15 ounces Ricotta cheese
    2 eggs, lightly beaten
    1/4 cup chopped parsley
    2 lbs. shredded mozzarella cheese
    1 cup grated Parmesan cheese

    Mix Ricotta, eggs and parsley.

    To assemble: Spray a 9x13 glass baking dish with cooking spray. Put a
    thin layer of the sauce on the bottom of the dish. Then put a layer
    of noodles on top of that. Cover noodles with a layer of the Ricotta
    mixture; then cover that with a layer of mozzarella. Repeat two more
    times. Sprinkle the Parmesan over the top layer. Cover tightly with
    foil and refrigerate overnight. Remove from refrigerator
    approximately 1 hour before baking. Bake, covered, at 350 degrees F
    for one hour. Remove covering; bake twenty minutes longer. Let cool
    30 minutes before serving. Serves 12.
