Oatmeal Shortbread

    1 cup real butter, softened (no substitutes)
    1/2 cup brown sugar, packed
    1 teasp. vanilla extract
    1/2 teasp. soda
    1 cup all-purpose flour
    2 cups rolled oats

    Mix butter, sugar, and vanilla until fluffy. Measure flour by dipping method or by sifting. Blend four, soda, and rolled oats; stir into butter mixture. Chill 1 to 2 hours until firm. Heat over to 350 degrees. Roll dough 1/4-in. thick on lightly floured board. Cut in 1-1/2 in. rounds, squares or fancy shapes. Bake on ungreased baking sheet 10 to 12 minutes. Yield: 3-1/2 to 4 dozen.
