1/2 cup butter, softened (no substitutes)
1/2 cup powdered sugar (unsifted)
1/2 teasp. vanilla extract
1/4 cup (1 oz.) ground nuts--not walnuts or peanuts
1 cup less 2 Tablsp. unsifted flour
1 Tablsp. cornstarch
Cream the butter until light and fluffy. Cream in the powdered sugar and vanilla. Stir in ground nuts, then flour and cornstarch. Knead until smooth on a very lightly floured board. (The dough is sticky.) Spray a shortbread pan or other cake pan (equal to 9X9-in square or 9-in. round pan) with non-stick vegetable oil spray. Firmly press dough into pan. Prick top of shortbread thoroughly with a fork (and if using other pan, prick and "score" dough prior to baking). Bake at 325 degrees for 30-35 minutes, or until lightly browned. Let shortbread cool in the pan for at least 10 minutes before loosening and cutting, but do this while still warm.
