Recipe Preparation Level: moderate
My 3-year-old grandson LOVES these; (so do his grandpa and grandma)!
2 1/2 c. flour
2 tsp. soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp. ginger
1/4 c. molasses
3/4 c. margarine or butter, softened
1 c. sugar
Extra granulated sugar to roll dough in
Sift together and set aside, flour, soda, cinnamon, cloves, ginger and salt.
In large mixing bowl, beat sugar and butter at medium speed, till light and fluffy. Beat in molasses and egg, mixing well. Gradually add flour mixture and beat till well combined. Cover dough and chill for, at least, one hour.
Preheat oven to 375*; grease cookie sheets.
Form dough into 1" balls; roll in granulated sugar. Place 2" apart on cookie sheets and bake for 5-7 minutes or till golden brown. Let set on cookie sheets about 1 minute; remove to wire racks to finish cooling.
Makes about 7 dozen cookies.
