Lobster Newburg

    LOBSTER NEWBURG

    2 c. lobster meat
    2 egg yolks, beaten
    2 Tbsp. sherry
    1 Tbsp. flour
    1 Tbsp. lemon juice
    4 Tbsp. butter
    1 c. light cream
    salt and paprika

    Heat the lobster thoroughly in 3 tablespoons of the
    butter and 2 tablespoons of sherry. Be careful not to brown
    the butter. In another saucepan, blend the rest of the butter
    with the flour, all the cream and stir continually until the
    sauce boils. Remove from the heat. Stir in the beaten egg
    yolks and return to the heat, stirring about 2 minutes until
    thickened. Add the heated lobster, lemon juice and seasonings
    and mix well but do not heat again. Serve immediately on toast
    points. Garnish with chopped water cress if you have any
    handy.
