1/2 cup butter, softened
1/2 cup powdered sugar (unsifted)
2 teasp. grated lemon peel (fresh is best)
1/2 teasp. vanilla extract
1 cup all-purpose flour (unsifted)
Cream butter until light. Cream in sugar, lemon peel, and vanilla. Work in flour with wooden spoon. Knead dough on unfloured board until nice and smooth. Firmly press dough into ungreased pan. Prick top thoroughly with fork and score into bite-sized squares. Bake 325 degrees for about 30-35 minutes, or until lightly browned. Let shortbread cool in pan 10 minutes before cutting and removing from pan.
