Japanese Marinated Mushrooms

    Ingredients
    2 pounds fresh button mushrooms
    1/4 cup soy sauce
    3/8 cup Mirin (Japanese cooking sake) or sweet sherry
    1/2 cup white vinegar
    1-1/2 teaspoons salt
    1/2 cup minced onion, fresh or 1/4 cup dried minced onion
    Cook cleaned, fresh mushrooms in boiling water for 3 to 5 minutes. Drain well.

    Bring soy sauce, Mirin, vinegar, salt, and onions to a boil. Pour over mushrooms in a glass container. Refrigerate at least 24 hours; these will keep at least a week (if you don't eat them all).

    Serves:12 to 18.
