Fresh Corn Pie

    Double pie crust

    2 eggs,lightly beaten
    2 tbs melted butter
    2 tbs flour
    1/2 cup milk
    Beaten together

    5 cups fresh corn
    2 tbs chopped green peppers
    2 tbs chopped onions
    2 tbs chopped celery
    2 hard boiled eggs
    4 cups milk
    1 stick butter
    salt and pepper

    Line a 9" deep pie plate with crust. Mix corn, green peppers, onions, and celery, add beaten mixture of flour, eggs, milk and butter, mix til coated. Pour into pie shell and add two sliced hard boiled eggs to top. Cover with second pie crust and seal. Cut a few vents in crust. Bake at 350F for one hour or til light gold.

    Next warm milk and stick of butter and warm til butter melts. This you put over your slice of corn pie in a bowl. Add the amount of salt and pepper you want.
