Fresh Cherry Pie

1 1/3 cup sugar
1/3 cup flour
1/8 teaspoon salt
3 drops almond extract
4 cups pitted tart cherries
Pastry for 2-crust 9-inch pie
2 tblsp. margarine
Combine sugar, flour and salt in bowl. Add almond extract and cherries. Toss with sugar-flour mixture, mixing thouroughly,.
Rollout half of pastry. Fit in 9-inch pie plate. Turn cherry mixture into pastry-lined pie plate. Dot with margarine. Roll out remaining pastry; cut in 1/2 inch strips. Arrange on top of pie in lattice pattern; flute edges.
Bake in 425* oven 40 minutes or until crust is golden brown. If edges brown too much, cover with strip of aluminum foil. Cool on rack. Makes 6 to 8 servings.
NOTE: Use 1 1/2 cups sugar if you like a sweeter pie.
