Dutch Baby Pancake

6 T. all purpose flour
1 T. granulated sugar
6 T. milk
3 T. butter
lemon wedges, optional
In blender or food processor whirl eggs, flour sugar and milk until smooth, scraping edges of container a needed. Oven to 425* Place butter in a 10 or 12 " ovenproof frying pan and set on rack slightly
above center. When butter is melted ( about 4 minutes) remove pan and tilt to coat bottom and sides. Quickly pour in batter and return pan to oven and bake until pancake is puffed and golden brown (about 15 minutes). Sprinkle with powdered sugar and cut into wedges. If desired offer lemon wedges to squeeze over portions. Serves 6.
