1/2 c buttter
1/2 c brown sugar
1 c flour
1 c brown sugar
1 tsp vanilla
2 tbs flour
1/2 tsp salt
1 tsp baking powder
1 1/2 c shredded coconut
1 c chopped nuts
Mix butter, the 1/2 c brown sugar and the 1 c flour with fork into a crumbly mass; pat into an 8 x 12" pan, covering the bottom evenly. Bake 375° for 10 mins. Set aside to cool. Beat the eggs, 1 c brown sugar and vanilla together. Mix 2 tbs flour, salt and baking powder . Sprinkle over the cocont and nuts; mix to coat. Add to the egg-sugar mixture and blend. Pour mixture onto the baked crust, spread evenly and bake 375° for 20 mins. Cool slightly. Use sharp knife to cut into bars abour 3/4" wide and 2" long while still warm; frost with Orange Butter Frosting. Makes 4 dozen.
Orange Butter Frosting
Cream 1/4 c butter with 2 c powdered sugar. Add 1 tsp vanilla and 1 tsp (or more to taste) of grated orange rind. Work in 2 tbs orange juice, enough to makee the mixture pliable and a little softer than you want the finished frosting.
