Different Flavored Butter Icings

    BUTTER ICING

    1/3 cup butter
    1 egg yolk, well beaten
    or 2 tablespoons milk,
    cream, or fruit juice
    1- 1-1/3 cups icing sugar
    1/2 teaspoon vanilla

    Cream butter thoroughly. Add beaten yolk or the
    liquid and beat well. Gradually blend in sugar until
    icing is of the right consistency to spread. Add
    vanilla spread on cake.

    LEMON or ORANGE BUTTER ICING

    1/3 cup butter
    2 tablespoons lemon or orange juice
    1- 1-1/2 cups icing sugar
    1 or 2 teaspoons grated rind

    Cream butter thoroughly. Combine juice and rind and
    add to butter; and beat well. Gradually blend in
    sugar until icing is of right consistency to spread.

    CHOCOLATE BUTTER ICING

    1/3 cup butter
    1 egg yolk, well beaten
    or 2 tablespoons milk
    1 - 1-1/2 cups icing sugar
    1-1/2 ounces melted chocolate

    Cream butter thoroughly; add to melted chocolate. Add
    beaten egg yolk or milk and beat well. Gradually
    blend in sugar until icing is of the right consistency
    to spread.

    MOCHA BUTTER ICING

    1/3 cup butter
    2 tablespons cold coffee
    1 - 1-1/2 cups icing sugar
    1 ounce melted chocolate

    Cream butter thoroughly; add to coffee and beat well.
    Gradually blend in sugar until icing is of right
    consistency to spread.
