Crispy Potato Boats

8 lge potatoes, baked whole (see note)
6 rashes rindless bacon, chopped
1 1/2 cups grated tasty cheese
125g (4oz) camembert cheese, chopped
1/4 cup crumbled blue vein cheese
S & P to taste
1/4 cup olive oil
Cut each potato in half. Scoop our flesh, leaving a thin layer next to the skin (see Note). Cut each potato half into 2 pieces, lengthways.
Fry bacon until crisp. Mix with combined cheeses and seasonings.
Brush potato skins inside and out with oil. Divide cheese and bacon mixture evenly between potato boats.
Cook under a hot griller for 5mins or until crisp and golden. Serve with sour cream and chilli sauce.
NOTE: Prick each potato. Bake in mod oven for about 1 1/4 hours or until tender. Alternatively, cook in microwave.
