1 quart oysters
3 c milk
1 c heavy cream
2/3 c butter
3 Tbsp flour
salt, pepper, and lemon juice to taste
Heat the milk milk BUT do NOT BOIL. Heat the oysters in their own
juice until edges curl, seperate, and skim liquor. Sift flour into the
melted butter in a sauce pan, heat, stir well. Add the hot milk and
oyseter juice together and beat the mixture until thick and smooth.
Add cream, oysters, and seasoning. Serve on buttery toast.
