Citrus and Cilantro Slaw

Here is a quick and easy salad that is a wonderful compliment to spic Mexican dishes. Usually serves with authentic tacos, it can also a great dish on it own. Here is my variation.
1 Green cabbage, shredded
1 Red cabbage, shredded
2-3 Roma tomatoes, diced
3 lemons
2 green onions, chopped
1 bunch of cilantro
2 teaspoons kosher salt
pepper to taste
Shred both cabbages and set aside in a large bowl. Add diced tomatoes and green onions. Add salt and stir. Chop cilantro and add to other ingredients. Halve and juice one lemon over the mixture and stir. Taste. Lemon should not overpower. Add more lemon juice and black pinch of black pepper to taste.
Chill before serving.
